PORRIDGE WITH ROASTED PUMPKIN, WALNUTS AND CINNAMON

Loving the taste of roasted pumpkin?! What about a flavour some hot lenten breakfast with pumpkin, that’s not only super delicious but will also boost your energy for the day.

Ingredients

  • 1 cup oats
  • 3 cups water or plant milk
  • 200 g roasted pumpkin
  • 2 tbs honey agave or maple syrup to taste
  • 2 tbs walnuts
  • 1 tbs flaxseed ground
  • 1/2 tbs cinnamon

Instructions

  • Bring the water to a boil in a small pot and add the oats. Reduce the heat and stir continuously for about 5-7 minutes.
  • In the last minute add the nuts, the cinnamon and the sweetener.
  • Serve in a bowl and garnish each serving with roasted pumpkin, walnuts and flaxseed.
