300gpotatoes
100gpickles

Instructions
Boil and peel the potatoes. The cooking time depends on the potato type, but a good rule of thumb is to cook them for about 20-25 minutes. Dice the boiled potatoes into cubes and put them in a large bowl.
Peel and chop the onion. Chop the boiled beetroot and pickles and put them in a salad bowl.
Season with salt and olive oil and mix well. Let it rest for 10 minutes and season again if necessary. Potatoes absorb salt quickly, hence the need to season for a second time.
