POTATO AND BEETROOT SALAD

A lovely and very tasty winter salad that’s easy and quick to prepare. Try out this simple potato beetroot salad – you’ll find the recipe at www.mamunche.com

Ingredients

  • 200 g Beetroot precooked
  • 300 g potatoes
  • 100 g pickles
  • 1 onion
  • 3-4 tbs olive oil
  • Salt to taste

Instructions

  • Boil and peel the potatoes. The cooking time depends on the potato type, but a good rule of thumb is to cook them for about 20-25 minutes. Dice the boiled potatoes into cubes and put them in a large bowl.
  • Peel and chop the onion. Chop the boiled beetroot and pickles and put them in a salad bowl.
  • Season with salt and olive oil and mix well. Let it rest for 10 minutes and season again if necessary. Potatoes absorb salt quickly, hence the need to season for a second time.
