Tabbouleh Salad with Bulgur

Ingredients

  • 1 cup bulgur
  • 1 bunch fresh parsley
  • 1/2 bunch fresh mint
  • 1 onion red or white
  • 10 -12 cherry tomatoes or 2 regular tomatoes

Dressing

  • 2 tbs olive oil
  • 2 tbs lemon juice freshly squeezed
  • Salt to taste

Instructions

  • Cook the bulgur according to the package instructions.
  • Peel and cut the onion. Chop the tomatoes, parsley and mint and transfer to a salad bowl.
  • Wash and drain the bulgur and add to the bowl.
  • Mix the ingredients for the dressing, pour over salad and mix well.
