Ingredients
1cupbulgur
1bunch fresh parsley
1/2bunch fresh mint
1onionred or white
10 -12cherry tomatoes or 2 regular tomatoes
Dressing
2tbsolive oil
2tbslemon juice freshly squeezed
Salt to taste
Instructions
Cook the bulgur according to the package instructions.
Peel and cut the onion. Chop the tomatoes, parsley and mint and transfer to a salad bowl.
Wash and drain the bulgur and add to the bowl.
Mix the ingredients for the dressing, pour over salad and mix well.
