VEGAN POTATO FRITTERS
Potato fritters lover?! Or you’re just looking for a new vegan recipe?! – this recipe is easy and you need only a few products.

- 1 kg potatoes
- 1 onion
- 1/2 cup Parsley chopped
- 1 tbs pennyroyal or spearmint (optional)
- 2 tbs flour
- Salt
- black pepper
- frying oil
Vegan cashew dip
- 1/2 cup raw cashew nuts soaked for 2-3 hours in water
- 1/2 lemon juiced
- 1/4 cup cold water
- Salt by taste
Peel and wash the potatoes, cut them into equal pieces and start boiling them.
Finely chop the onion and the parsley.
After the potatoes are boiled, remove the water and mash them. Add the onion and the parsley and 2 tablespoons of flour and knead well the mixture.
Form the fritters with hands, I made around 14 pieces. Then put them in the refrigerator for 5-10 minutes.
Fry in a deep frying pan until they get golden in colour.
Vegan cashew dip
Put lemon, cashew, salt and water in a blender and mix until you get a smooth mixture.
You can also put a little bit of chopped parsley.
