250gfull grain flour
30gcocoa powder
1tea spoonbaking powder
170gbrown sugar
170gsoft butter
100mlMilk
2egg
2table spoonhazelnut liqueuror other
100gDark chocolate
200gzucchinigrated in larger pieces
For the frosting
70gchocolate of your choice
20gButter
50mlheavy cream
For Decoration
50groasted hazelnutsor other nuts
Instructions
Finely chop the dark chocolate or grate it in large pieces. Grate the zucchini and leave it aside. Then heat up the oven at 175°C with ventilator or at around 190°C without ventilator.
Mix the flour, the cocoa and the baking powder in a large bowl.
In a separate bowl beat up the butter with the sugar and then add the eggs one by one. Add the milk and the liqueur. You can use liqueur with a favourite aroma of hazelnut, almond or just pure rum.
Mix the egg mixture with the flour and stir well. Then add the zucchini and the dark chocolate and stir again.
Put some oil or spread butter into a rectangular cake pan and sprinkle some cocoa at the bottom. Then put the batter into the cake tin and bake for like 60 minutes. If you check whether the cake is ready by inserting skewer or a toothpick, keep in mind that the cake has to remain a little and to remain juicy.
After you take the cake out of the oven let it cool down completely. Melt the ingredients for the frosting in a water bath, pour it evenly on the cake and decorate with pieces of nuts.
