1cuplentilsbeluga, brown or green
1headBeetroot
1handfullchopped parsley
1/2red onion
1handful walnutoptional
For the dressing
2tbsolive oil
2tbslemon juiced
sea saltby taste
Instructions
Boil the lentil as described on the package. It usually takes 20-25 minutes.
Peel and thinly slice the beetroot . Brush with some olive oil and add a pinch of salt. Roast for 20 minutes at 200 degrees.
Chop onion and parsley. Once the lentil is boiled, cool under running cold water. Let the lentil drain from the water and put it in a big bowl. Add parsley, onion and beetroot.
Mix and stir the ingredients for the dressing, add to salad and mix well.
