Ingredients needed for your Lentil Salad with roasted Beetroot
For the salad
- 1 cup lentils beluga, brown or green
- 1 head Beetroot
- 1 handfull chopped parsley
- 1/2 red onion
- 1 handful walnut optional
For the dressing
- 2 tbs olive oil
- 2 tbs lemon juiced
- sea salt by taste
This salad with lentil is discovered accidentally, but it is really delicious and I can highly recommend it. It combines two of my favourite foods and it is perfect for winter season, can be consumed a bit warm and keep you satiated.

LENTIL SALAD WITH ROASTED BEETROOT
Ingredients
- 1 cup lentils beluga, brown or green
- 1 head Beetroot
- 1 handfull chopped parsley
- 1/2 red onion
- 1 handful walnut optional
For the dressing
- 2 tbs olive oil
- 2 tbs lemon juiced
- sea salt by taste
Instructions
- Boil the lentil as described on the package. It usually takes 20-25 minutes.
- Peel and thinly slice the beetroot . Brush with some olive oil and add a pinch of salt. Roast for 20 minutes at 200 degrees.
- Chop onion and parsley. Once the lentil is boiled, cool under running cold water. Let the lentil drain from the water and put it in a big bowl. Add parsley, onion and beetroot.
- Mix and stir the ingredients for the dressing, add to salad and mix well.
