1avocadoripe
1/2cup chickpeas canned
4slices of bread wholegrain, rye or other
1-2tbs lemon juice
1/4onion
Salt to taste
Black pepper to taste
4leaves of lettuce or а handful of baby spinach
3-4cherry tomatoes
Instructions
Combine the chickpeas, avocado, onion, salt, black pepper and lemon juice in a blender or food processor. Blend until obtaining a grainy mass, not purée.
Spread the mixture onto the slices of bread and serve with lettuce and a few tomato slices for garnish.
