Chickpea Avocado Salad Sandwich

Ingredients

  • 1 avocado ripe
  • 1/2 cup chickpeas canned
  • 4 slices of bread wholegrain, rye or other
  • 1-2 tbs lemon juice
  • 1/4 onion
  • Salt to taste
  • Black pepper to taste
  • 4 leaves of lettuce or а handful of baby spinach
  • 3-4 cherry tomatoes

Instructions

  • Combine the chickpeas, avocado, onion, salt, black pepper and lemon juice in a blender or food processor. Blend until obtaining a grainy mass, not purée.
  • Spread the mixture onto the slices of bread and serve with lettuce and a few tomato slices for garnish.
