Crispy Tofu Salad

A very tasty salad with crispy tofu, peanuts and an Asian inspired dressing. Try this delicious recipe!

Ingredients

For the salad

  • 250 g mixed salad greens or another leafy greens
  • 150 g tofu
  • 1 carrot grated
  • 1 red pepper sliced
  • 1 handful of roasted peanuts

For the dressing

  • 2 tbs sesame oil
  • 3 tbs peanut butter
  • 1 tbs maple syrup or other sweetener
  • 1 tbs rise vinegar
  • 1 tbs soy sauce
  • 1 clove garlic pressed

Instructions

  • Wrap the tofu in a kitchen towel and put a heavy object on top of it. In this way, we’ll get the water out of the tofu to make it crispy. Leave for 10-15 minutes.
  • Cut the tofu into cubes, put them in a bowl, add the selected spices and mix well. Fry the tofu cubes on high heat in a little oil for 5 minutes. Then transfer to a tray and roast for 10 minutes in a preheated oven.
  • Now put the washed salad greens, carrot, peppers in a salad bowl. Put the peanuts and pieces of tofu on top.
  • Mix the ingredients for the dressing, pour it over the salad. Bon appétit!
