1kggreen beansfresh or canned
2carrots
5cloves of garlic
1cup tomatoes can or fresh and finely chopped
2tbspaprika
1cup water
1tsmint
3tbsolive oil
Salt to taste
Black pepperto taste
Instructions
Wash and prepare the green beans, remove the tops and tails and dice into 3-4-centimeter pieces. Peel and chop the carrots. Cook the vegetables in a suitable pot with salted boiling water until the beans soften. Usually it takes about 15-20 minutes. Cooking the carrots beforehand isn’t obligatory, but it shortens the cooking time in the oven. If you’re using canned green beans, just go to the next step.
Combine the beans, carrots, and diced garlic in a casserole, clay pot or other fireproof cookware. Add the tomatoes, olive oil, water and spices and mix well.
Bake at 200°C for about 30-35 minutes, or until the carrots soften.
