If I have to be honest, I thought a lot about how should I name this recipe… There are so many similar recipes in Bulgaria with different names that I couldn’t decide which is the right one for the occasion. I like the simple definitions, that’s why I decided I should stick with green beans baked stew. 

Summer is the green beans’ season. It’s definitely not the most popular vegetable out there, but it’s very tasty and easy to prepare. Canning green beans for the winter months was an annual event in my house while I was growing up. Green beans are also one of the main ingredients in the traditional Bulgarian stew in clay pot called guvech, but in this case we’ll be using only green beans, carrots, garlic and tomatoes (you can use both fresh green beans or canned ones). The preparation of this green beans baked stew is extremely easy, and the taste is just divine. 

If desired, it can be served with yogurt if you’re not vegan or fasting.

Green Beans Baked Stew

Stew with green beans, carrots, tomatoes and a lot of garlic – one of the most delicious vegan recipes! A tasty, indescribably easy traditional Bulgarian dish.

Ingredients

  • 1 kg green beans fresh or canned
  • 2 carrots
  • 5 cloves of garlic
  • 1 cup tomatoes can or fresh and finely chopped
  • 2 tbs paprika
  • 1 cup water
  • 1 ts mint
  • 3 tbs olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  • Wash and prepare the green beans, remove the tops and tails and dice into 3-4-centimeter pieces. Peel and chop the carrots. Cook the vegetables in a suitable pot with salted boiling water until the beans soften. Usually it takes about 15-20 minutes. Cooking the carrots beforehand isn’t obligatory, but it shortens the cooking time in the oven. If you’re using canned green beans, just go to the next step.
  • Combine the beans, carrots, and diced garlic in a casserole, clay pot or other fireproof cookware. Add the tomatoes, olive oil, water and spices and mix well.
  • Bake at 200°C for about 30-35 minutes, or until the carrots soften.
