1kgsalmon
1kgCarrots
4tbsolive oil
1Lemononly zest
Salt
black pepperfreshly ground
Instructions
Wash the fish fillets and dry with kitchen paper. Season the salmon with the lemon zest, salt, and pepper. Put on the side.
Peel the carrots and slice into French fry shaped pieces ( 1 cm x 1 cm x 5 cm). Toss carrots with the olive oil, salt and pepper.
Pour the carrots into a baking pan. Baking time for the carrots is 20 min. Bake 10 minutes then flip each carrot or use a spatula to turn carrots so they can bake on both sides evenly.
Most of the time I use the same pan and separate with a baking sheet the salmon. Baking time is also around 20 min. Depending on how thick the salmon filets are you should put the carrots and salmon in the oven at the same time or just put the salmon a few minutes later. There is this rule that any 1 inch (2,54 cm) of salmon needs 10 min. in the oven.
