Ingredients you need
- 1 kg salmon cut into 4 portions
- 1 kg carrots
- 4 spoons olive oil
- Zest from one lemon
- Sea salt
- Freshly ground black pepper
For many years we were made to believe that salmon is the healthiest fish. Excellent source of high-quality protein, vitamins, and minerals and with the high content of omega-3 fatty acids. The idea that eating fish is super good for our brain function and it may reduce the risk of heart diseases made many people overdoing it.
In the last few years, the information about the bad quality toxic fish from the fish farms and the known alternative sources of omega-3 fatty acids made me reduce my consumption of salmon extremely.
It is still difficult to break up and stop eating salmon at all but we all should be aware of the risks eating farm fish and consider buying the more expensive wild fish. Wild (free range) fish should be consumed wisely because as we all know there is not enough fish in the ocean for us and for the animals.
I have been cooking this salmon with carrots baked fries often as this is a really simple recipe. It turned out it became my favorite one. I think that the sweetness of the carrots complements well the salmon and I also like how the color of both blends together.
