Ideas for breakfast or a snack with no meat?! Try this delicious and different sandwich with cauliflower and you’ll be delighted.

Ingredients
1small head ofcauliflower
8slicesbreadrye or wholegrain
8tbsvegan spreadhummus or similar
1-2tbsolive oil
1tssweet paprika powder
1tscurry powder
4leave Lettuce saladiceberg or other
Instructions
Wash the cauliflower and cut it into slices (steaks). Smear with olive oil and sprinkle a bit of salt, paprika powder and curry powder on the both sides. Roast for 20 minutes in a 200°C oven.
Spread the sunflower seed pate (or other vegan spread of your choice – humus, etc.) onto the bread slices.
In each sandwich I put one slice of the roasted cauliflower and some salad.
