ROASTED CAULIFLOWER SANDWICH

Ideas for breakfast or a snack with no meat?! Try this delicious and different sandwich with cauliflower and you’ll be delighted.

Servings 4 sandwiches

Ingredients

  • 1 small head of cauliflower
  • 8 slices bread rye or wholegrain
  • 8 tbs vegan spread hummus or similar
  • 1-2 tbs olive oil
  • 1 ts sweet paprika powder
  • 1 ts curry powder
  • 4 leave Lettuce salad iceberg or other

Instructions

  • Wash the cauliflower and cut it into slices (steaks). Smear with olive oil and sprinkle a bit of salt, paprika powder and curry powder on the both sides. Roast for 20 minutes in a 200°C oven.
  • Spread the sunflower seed pate (or other vegan spread of your choice – humus, etc.) onto the bread slices.
  • In each sandwich I put one slice of the roasted cauliflower and some salad.
