Ingredients needed for your Cauliflower Sandwich
- 1 small head of cauliflower
- 8 slices bread rye or wholegrain
- 8 tbs vegan spread hummus or similar
- 1-2 tbs olive oil
- 1 ts sweet paprika powder
- 1 ts curry powder
- 4 leaves Lettuce salad, iceberg or other
And because I’m always searching for new ideas especially for breakfast, I decided to try a sandwich with roasted cauliflower. I have that favourite recipe for roasted cauliflower and that’s where my idea came from.
I cut the cauliflower into slices (like steaks) so that it won’t fall apart when I eat it, I put a bit of salad and I smeared the bread with sunflower seed pate in which I put roasted pepper. Some great ideas for vegan bread spreads you can find on the blog like for example white bean hummus or colourful beetroot sunflower seed spread. That sandwich became certainly marvellous and I will make it quite often for sure.
How to prepare the roasted cauliflower sandwich
ROASTED CAULIFLOWER SANDWICH
Ideas for breakfast or a snack with no meat?! Try this delicious and different sandwich with cauliflower and you’ll be delighted.
Servings 4 sandwiches
Ingredients
- 1 small head of cauliflower
- 8 slices bread rye or wholegrain
- 8 tbs vegan spread hummus or similar
- 1-2 tbs olive oil
- 1 ts sweet paprika powder
- 1 ts curry powder
- 4 leave Lettuce salad iceberg or other
Instructions
- Wash the cauliflower and cut it into slices (steaks). Smear with olive oil and sprinkle a bit of salt, paprika powder and curry powder on the both sides. Roast for 20 minutes in a 200°C oven.
- Spread the sunflower seed pate (or other vegan spread of your choice – humus, etc.) onto the bread slices.
- In each sandwich I put one slice of the roasted cauliflower and some salad.
