Vegan Apple Bread Elisabeth

An incredibly delicious vegan apple bread with hazelnuts and dry fruit

Ingredients

  • 750 g Apples peeled and grated in large pieces
  • 200 g Sugar brown
  • 250 g Dried fruits raisins, blueberries, figs etc
  • 150 g Hazelnut whole and raw
  • 1 tablespoon liquor
  • 1 tablespoon cocoa
  • 1 tablespoon cinnamon
  • 500 g flour whole wheat
  • 1 1/2 packages baking powder
  • 1 tablespoon oil for the cake tin

Instructions

  • Peel and grate the apples in a big bowl.
  • Add the sugar, the dried fruit, the hazelnuts, the cocoa, the liqueur and the cinnamon. Scramble it well, cover it and let it become stale for a night. I’ve tried it also for 4-5 hours and it still turns out well.
  • After the mixture has become stale we add the flour and the baking powder and scramble well.
  • Preheat oven. Bake it for like 60-75 minutes at 175 degrees in an oiled cake tin. It’s best to be with oblong shape but I didn’t have one until recently and it turns out well also in a round shape as you can see on the photo.

Notes

The dried fruit are selected according to your taste, for example, you can make it only with raisins.
