400gsilken tofu
50gDark chocolatevegan, 70 % cocoa or higher
1avocadoripe and soft
10-15fresh dates
Instructions
Soak the dates in warm water and leave them for 5-10 minutes. This will make it a lot easier to peel off the skin. If you want the mousse to be smooth, you don't want to feel any pieces in your mouth later.
Meanwhile, melt the chocolate in a water bath and let it cool.
Peel the dates and remove the stones. Peel the avocado and put it in the blender or a bowl, add the silk tofu and dates. Add the melted chocolate. Using the blender, mix until the mixture is homogeneous and smooth.
Put in suitable cups or bowls and let rest in the refrigerator for at least 30 minutes. Decorate as desired with fresh fruit, grated chocolate, or nuts.
