Ingredients
1red pepper
200gartichoke heartscanned

3-4cupbio vegetable stock
1cuprice
1/2cupwhite wine

Instructions
If you’re using tofu, dice into cubes and fry in little olive oil. Put aside.
Heat up some olive oil and add the onion and garlic, which you’ve peeled and finely chopped beforehand. Let them cook for 2-3 minutes.
Chop the pepper and add to the pan. Add the rice, pour the white wine and stir. Season with salt, black pepper and paprika. Grate the fresh turmeric and add it as well.
Pour 3 cups vegetable broth and let the rice simmer. When the broth evaporates, check if the rice is cooked, if not add some more broth. The broth quantity depends on the type of rice you’re using.
After the rice is cooked add the artichoke, sun-dried tomatoes, olive and peas. Toss in the fried tofu and stir.
