Ingredients needed for the vegan paella

  • 1 red pepper
  • 200 g artichoke hearts canned

  • 3 tbs olive oil
  • 1 piese curcuma around 1 cm
  • chilli pepper
  • 2 slices Lemon to serve with
  • Salt to taste
  • black pepper to taste

I have to say that this recipe has a lot in common with the traditional Spanish paella but without its basic ingredients as chicken and seafood. The recipe is suitable for fasting or vegan diet and has the aroma and color of paella. The main ingredients for this vegan paella option are rice and various vegetables.

I used artichokes, sun-dried tomatoes, olives, pepper, but you can improvise and add whatever vegetables you like.

VEGAN PAELLA

Ingredients

  • 1 red pepper
  • 200 g artichoke hearts canned

  • 100 g tofu optional
  • 3-4 cup bio vegetable stock
  • 1 cup rice
  • 1/2 cup white wine
  • 3 tbs olive oil
  • 1 piese curcuma around 1 cm
  • chilli pepper
  • 2 slices Lemon to serve with
  • Salt to taste
  • black pepper to taste

Instructions

  • If you’re using tofu, dice into cubes and fry in little olive oil. Put aside.
  • Heat up some olive oil and add the onion and garlic, which you’ve peeled and finely chopped beforehand. Let them cook for 2-3 minutes.
  • Chop the pepper and add to the pan. Add the rice, pour the white wine and stir. Season with salt, black pepper and paprika. Grate the fresh turmeric and add it as well.
  • Pour 3 cups vegetable broth and let the rice simmer. When the broth evaporates, check if the rice is cooked, if not add some more broth. The broth quantity depends on the type of rice you’re using.
  • After the rice is cooked add the artichoke, sun-dried tomatoes, olive and peas. Toss in the fried tofu and stir.
