VEGAN POTATO FRITTERS

Ingredients

  • 1 kg potatoes
  • 1 onion
  • 1/2 cup Parsley chopped
  • 1 tbs pennyroyal or spearmint (optional)
  • 2 tbs flour
  • Salt
  • black pepper
  • frying oil

Vegan cashew dip

  • 1/2 cup raw cashew nuts soaked for 2-3 hours in water
  • 1/2 lemon juiced
  • 1/4 cup cold water
  • Salt by taste

Instructions

  • Peel and wash the potatoes, cut them into equal pieces and start boiling them.
  • Finely chop the onion and the parsley.
  • After the potatoes are boiled, remove the water and mash them. Add the onion and the parsley and 2 tablespoons of flour and knead well the mixture.
  • Form the fritters with hands, I made around 14 pieces. Then put them in the refrigerator for 5-10 minutes.
  • Fry in a deep frying pan until they get golden in colour.

Vegan cashew dip

  • Put lemon, cashew, salt and water in a blender and mix until you get a smooth mixture.
  • You can also put a little bit of chopped parsley.
