Ingredients needed for Vegan Potato Fritters

For the fritters

  • 1 kg potatoes
  • 1 onion
  • 1/2 cup Parsley chopped
  • 1 tbs pennyroyal or spearmint (optional)
  • 2 tbs flour
  • salt
  • black pepper
  • frying oil

For the cashew dip

  • 1/2 cup raw cashew nuts soaked for 2-3 hours in water
  • 1/2 lemon juiced
  • 1/4 cup cold water
  • salt by taste

Potato fritters are one of my favourite meals from my childhood. My mother makes uniquely delicious potato fritters… Her recipe is with the traditional Bulgarian feta cheese and pennyroyal herb (Bulgarians usually use for bean soup) and lots of friends, who have eaten her potato fritters, are still telling stories how delicious this was.

I tried to adapt the recipe and to make them without cheese and eggs and it worked out. The first ones broke into the frying pan but the oil wasn’t hot enough… They became very delicious and were eaten quickly. It impressed me the fact that 1kg of potatoes fed two people (me and my husband) … only two! We must have been hungry!

Instructions
  1. Peel and wash the potatoes, cut them into equal pieces and start boiling them.
  2. Finely chop the onion and the parsley.
  3. After the potatoes are boiled, remove the water and mash them. Add the onion and the parsley and 2 tablespoons of flour and knead well the mixture.
  4. Form the fritters with hands, I made around 14 pieces. Then put them in the refrigerator for 5-10 minutes.
  5. Fry in a deep frying pan until they get golden in colour.
Vegan cashew dip
  1. Put lemon, cashew, salt and water in a blender and mix until you get a smooth mixture.
  2. You can also put a little bit of chopped parsley.
