Ingredients
2cupdried white beans

1cupcanned tomatoesor ripe fresh tomatoes chopped
2tbsoilolive oil, sunflower seed oil or any other

1tbssweet paprika powder

pinch ofchilli flakesor cayenne pepper
Instructions
Soak the beans in cold water overnight for at least 8 hours.
Change the water and bring to a boil. After you bring to a boil, throw out the first water.
Pour in cold water to cover the beans and at least 2 centimeters above their level. Bring to a boil again and reduce the heat. The cooking time depends on the type and quality of the beans you’re using. Periodically check if the beans are softened. It usually takes about an hour or a little longer until well cooked.
As the beans simmer, remove the foam that appears on the top. When the beans soften, add the peeled and finely chopped onions and carrots, oil, tomatoes and spices.
Leave to simmer for another 30 minutes. Add a whole dried chilli pepper and remove later or just add a little powdered chilli pepper.
Notes
* If the bean stew is too thin for your taste, you can thicken it with 1-2 tablespoons of wheat or corn flour.
