Ingredients you need for this chocolate zucchini cake

  • 250g of full grain flour
  • 30g of cocoa
  • 1 tea cup of baking powder
  • 170g of brown sugar
  • 170g of soft butter
  • 100ml of milk
  • 2 eggs
  • 2 tablespoons of hazelnut liqueur or other
  • 100g of dark chocolate
  • 200g of grated in large pieces zucchini

For frosting

  • 70g of chocolate of your choice
  • 20g of butter
  • 50ml of heavy cream

For decoration

  • 50g of roasted hazelnuts or other nuts

I created this recipe specially for a Bulgarian online food magazine and for my participation in their 2018 spring online issue. I totally forgot that I hadn’t put it in the blog… Also when I looked at my recipes in the blog recently I found out that I have only few things with chocolate – quite untypical of me…


I adore dark high-quality chocolate, I used to eat milk chocolate as well but since some time it’s too sweet for me. But if you like white chocolate, you can make a frosting of white chocolate – it’ll be also a unique effect, both outwardly and in taste.

CHOCOLATE ZUCCHINI CAKE

Ingredients

  • 250 g full grain flour
  • 30 g cocoa powder
  • 1 tea spoon baking powder
  • 170 g brown sugar
  • 170 g soft butter
  • 100 ml Milk
  • 2 egg
  • 2 table spoon hazelnut liqueur or other
  • 100 g Dark chocolate
  • 200 g zucchini grated in larger pieces

For the frosting

  • 70 g chocolate of your choice
  • 20 g Butter
  • 50 ml heavy cream

For Decoration

  • 50 g roasted hazelnuts or other nuts

Instructions

  • Finely chop the dark chocolate or grate it in large pieces. Grate the zucchini and leave it aside. Then heat up the oven at 175°C with ventilator or at around 190°C without ventilator.
  • Mix the flour, the cocoa and the baking powder in a large bowl.
  • In a separate bowl beat up the butter with the sugar and then add the eggs one by one. Add the milk and the liqueur. You can use liqueur with a favourite aroma of hazelnut, almond or just pure rum.
  • Mix the egg mixture with the flour and stir well. Then add the zucchini and the dark chocolate and stir again.
  • Put some oil or spread butter into a rectangular cake pan and sprinkle some cocoa at the bottom. Then put the batter into the cake tin and bake for like 60 minutes. If you check whether the cake is ready by inserting skewer or a toothpick, keep in mind that the cake has to remain a little and to remain juicy.
  • After you take the cake out of the oven let it cool down completely. Melt the ingredients for the frosting in a water bath, pour it evenly on the cake and decorate with pieces of nuts.
