Ingredients needed for the Potato and Beetroot Salad
- 200 g beetroot precooked
- 300 g potatoes
- 100 g pickles
- 1 onion
- 3-4 tbs olive oil
- salt to taste

This salad is extremely easy and simple but very delicious at the same time. I like it a lot, because I’m a beetroot fan and I’m always looking for ideas and new recipes to include it in.
Beetroot is widely used in the national cuisines of the Northern Europe, so it’s difficult to say where this salad comes from. Similar dishes are found in Poland, Estonia and Russia. There’s a French salad that also has a strong resemblance with it, but it’s made with mayonnaise.
The biggest surprise for me was the fact that the potato beetroot salad is a traditional dish for Christmas in… Panama. In other words, we could easily say that the beetroot has been around the world and it’s not a typical ingredient only for Northern Europe.

Ingredients
- 200 g Beetroot precooked
- 300 g potatoes
- 100 g pickles
- 1 onion
- 3-4 tbs olive oil
- Salt to taste
Instructions
- Boil and peel the potatoes. The cooking time depends on the potato type, but a good rule of thumb is to cook them for about 20-25 minutes. Dice the boiled potatoes into cubes and put them in a large bowl.
- Peel and chop the onion. Chop the boiled beetroot and pickles and put them in a salad bowl.
- Season with salt and olive oil and mix well. Let it rest for 10 minutes and season again if necessary. Potatoes absorb salt quickly, hence the need to season for a second time.
