Sweet potatoes are super healthy. Nutritionists claim that sweet potatoes are way more beneficial than white potatoes, even though they are not to be ignored as well.

Their nutritional value per 100 grams is 114 kcal. They contain 1.7 grams of protein; their carbohydrate is 25.6 grams. Sweet potatoes contain vitamins A, C, D and B complex, fiber, potassium, copper, phosphorus, antioxidants, sodium, calcium, iron and sugar. Sweet potatoes are recommended for pregnant women or for women who are trying to get pregnant because they are rich in folic acid. In addition to reducing the aging of the cells, the antioxidants help our body cope with a number of problems throughout the whole year, such as asthma and arthritis.

Besides their numerous beneficial properties, sweet potatoes are also very delicious. The first time I tried fried sweet potatoes (yes, I know… fried…) with wasabi mayonnaise I was crushed by the fact that I haven’t found this vegetable earlier. A few years back, when I was living abroad again, I’ve wondered in which recipes I could include them… I can easily find plenty of information and ideas now, so I guess I didn’t care enough back then.

I decided to make a healthier version and baked the potatoes in the oven. The type of sauce is up to you…

As I mentioned above, I like them served with wasabi mayonnaise, which I have never prepared from scratch. I recently bought vegan mayonnaise, which is super delicious and added some wasabi powder… and it turned out great.

Roasted Sweet Potatoes with Rosmary

Uniquely tasting potato wedges, slightly spicy, very crunchy and cooked with a little bit of fat.

Cook Time 40 minutes
Total Time 53 minutes

Ingredients

  • 500 g sweet potatoes yams
  • 3-4 tbs olive oil
  • 1-2 sprigs of rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat the oven to 200. Peel the potatoes and cut them into sticks. Put them in a large bowl.
  • Add the olive oil to the potatoes and mix well. Then season with salt, pepper and finely chopped rosemary and mix well again. Every potato must be covered with spices.
  • Place in a heated oven and bake for 30-35 minutes until golden. Serve with your preferred sauce.
