I can honestly admit that I have never been a big parsley fan… I love its aroma, but I find it hard to eat in large quantities, so my salad is more of a Tabbouleh-inspired, as I make it with much less parsley. You can use parsley in quantities according to your own taste.

Ingredients
- 1 cup bulgur
- 1 bunch fresh parsley
- 1/2 bunch fresh mint
- 1 onion red or white
- 10 -12 cherry tomatoes or 2 regular tomatoes
Dressing
- 2 tbs olive oil
- 2 tbs lemon juice freshly squeezed

Instructions
- Cook the bulgur according to the package instructions.
- Peel and cut the onion. Chop the tomatoes, parsley and mint and transfer to a salad bowl.
- Wash and drain the bulgur and add to the bowl.
- Mix the ingredients for the dressing, pour over salad and mix well.
