  • 1 cups polenta yellow cornmeal
  • 2 cups plant milk or nut milk
  • 1 tbs coconut oil
  • 1 tbs coconut flakes
  • 1 tbs honey or maple syrup
  • 1 tbs walnuts chopped
  • 1 tbs flax seeds grated

As much as I love oat flakes and porridge for breakfast, it’s inevitable to get sick of it after a while… Recently, I rediscovered the polenta, or cornmeal, which is used mostly for preparing savory dishes … I mentioned the polenta a little while back ago, when I published the Mediterranean polenta with vegetables recipe.

The idea behind my version for sweet polenta came to me few months ago. In the summer I was in London on a business trip and one night got invited to a dinner with my colleagues, where I ordered a polenta cake for dessert. I had never seen such a dessert in the menus before… Given the fact I’m a hobby cook, a former restaurant employee, I travel quite often and I like to eat new and interesting things, I was surprised. That’s how a new page with ideas and recipes to work on was created…. Polenta and polenta recipes ;).

This particular recipe is simple, fast and madly delicious. If you want, you can add cinnamon and other nuts. Just add whatever you have on hand.

BREAKFAST POLENTA WITH DRIED FRUITS

You’re looking for ideas for vegan breakfast? You’re tired of oat flakes? Try this recipe for polenta with dried fruits and you’ll be surprised of its great taste!

Ingredients

  • 1 cups polenta yellow cornmeal
  • 2 cups plant milk or nut milk
  • 1 tbs coconut oil
  • 1 tbs coconut flakes
  • 1 tbs honey or maple syrup
  • 1 tbs walnuts chopped
  • 1 tbs flax seeds grated

Instructions

  • Soak the dried fruits in little warm water for 5-10 minutes.
  • Warm up the nut milk in a small pot on medium heat. Gradually add the polenta in small portions and don’t forget to stir vigorously. You have to be careful; the mixture will become quite thick and could spatter and burn you while boiling... Just stay a little farther away from the stove...
  • Add the coconut oil and shredded coconuts while stirring.
  • Remove the polenta from the heat and stir. The mixture shouldn’t be boiling when adding the honey (if you’re using honey). Its health benefits disappear during heat treatment, I read somewhere that if added to hot meals or beverages, their temperature should be below 100 ° C.
  • Serve in bowls, add dried fruits (drained from water), a few walnuts and flaxseed.
