I just love oatmeal and porridge for breakfast, but every recipe gets boring after a while… that’s how I set off on an experimental journey into the world of warm vegan winter breakfast options.
My journey led me to the discovery that the polenta and quinoa are great not only for savory dishes, but for sweet ones as well. One thing led to another and I started experimenting with combinations with nuts, seeds, fresh fruits, dried fruits and other healthy supplements.

Breakfast Quinoa with Dried Fruit and Nuts
Ingredients
- 1/2 cup quinoa
- 1 apple or other fruit
- 1 tbs shredded coconut if desired
- 1 tbs flax seed grounded
- 2 tbs honey, agave syrup or another sweetener
- 2 tbs hazelnuts or other nuts
- 2 tbs cranberry dried natural
Instructions
- Rinse the quinoa thoroughly to wash away the bitter taste.
- Cook it (in 1 cup of quinoa to 2 ½ cups of water ratio) for about 15 minutes.
- Add honey or other natural sweetener. Garnish with fruits, nuts, shredded coconut and flaxseed.
