- 250 g red lentils
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 l bio vegetable stock
- 1 ts cumin powder
- 1/2 ts Coriander powder
- 1 bay leave
- 1/2 Lemon juice only

Red lentil, except being a source of proteins, also has low fat content and high fibres content. Just 100g of boiled red lentil covers 45% of the daily needs of folic acid of the body. It is a great source of iron and antioxidants.
The biggest advantage of the red lentil that is that it’s lean and peeled and is boiled way easier than the traditional brown lentil, beans or chickpeas. Red lentil is boiled for around 10-15 minutes and is very suitable for the days when we don’t have much time for cooking but want to eat something warm and satisfying.

Quick and delicious red lentil soup with oriental spices.

Ingredients
- 250 g red lentils
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 l bio vegetable stock
- 1 ts cumin powder
- 1/2 ts Coriander powder
- 1 bay leave
- 1/2 Lemon juice only
- Salt

Instructions
- Peel the onion, the carrot and the garlic and cut finely. Steam them in 3 tablespoons of olive oil at medium power for 2-3 minutes.
- Wash the lentil with cold water and add it into the saucepan. Pour with a vegetable bouillon, add the dried spices and let it simmer for around 15 minutes.
- When the lentil is boiled, pull out the bay-leave, strain and flavor with a freshly squeezed lemon juice, salt and pepper.
