For me, stuffed peppers are one of the most Bulgarian dishes, so to speak. There are so many variations of the recipe for stuffed peppers in our national cuisine that it is difficult to list.

We already had some stuffed bell peppers with soy mince during the fast this year that tasted like standard stuffed peppers with minced meat… So intentionally, this recipe is for classic stuffed peppers with mushrooms and rice, some people like to add walnuts as well. I skipped the walnuts but it’s up to you to add them. There are families eating stuffed peppers with sauce, while others prefer to forgo it… in our house, we like them garnished with a big salad.

Stuffed Peppers with Rice and Mushrooms

Authentic taste of vegan stuffed peppers with mushrooms and rice. Prepare this mouth-watering dish, following my easy, step-by-step recipe.

Ingredients

  • 6 red peppers
  • 100 g rice
  • 100 g button mushrooms
  • 1 onion
  • 1 carrot
  • 2 cups vegetable broth bio or homemade
  • savory or oregano to taste
  • salt to taste
  • black pepper to taste

Instructions

  • Finely cut the onion and carrot and sauté in preheated vegetable oil for 3-4 minutes. Add the mushrooms for about 2-3 minutes, then add the rice and cook for about a minute or until translucent.
  • Pour in the broth. If the broth is salt-free, season with salt and let it simmer until the water evaporates. Test the hardness of the rice, it should be almost cooked. If the rice is still hard, add some more warm water and wait for it to evaporate.
  • Season with black pepper and savory or oregano.
  • Cut the tops of the peppers and remove the seeds. My peppers were extremely thin and long and I had to made a slice in length to stuff them. Bake in preheated oven for 20-30 minutes.
