Ingredients needed for the sweet potato chickpea stew

  • 1 small onion
  • 1 medium sweet potato
  • 1 cup Chickpeas precooked or canned
  • 1 cup canned tomatoes or ripe fresh tomatoes chopped
  • 2 cloves garlic
  • 2 handful spinach
  • 2 tbs olive oil
  • 2 tbs wallnuts optional
  • 1 tbs cumin powder
  • 1 tbs honey agave or maple syrop
  • sea salt by taste
  • black pepper by taste
  • pinch of Harissa or chilli pepper

A wonderful Spanish stew with sweet potato, chickpea and spinach. All of the main ingredients are super healthy, which means we have everything our body needs – vegetable protein, zinc, iron, folic acid and various vitamins.

The idea behind this sweet potato chickpea stew is a traditional Spanish dish that really impressed me with unique flavour and taste, and which I wanted to recreate at home.

SWEET POTATO AND CHICKPEA STEW

A delicious recipe for vegan stew with chickpeas and sweet potato. You can also add spinach for even more vitamins. Try this recipe and it'll become one of your favorites.

Ingredients

  • 1 small onion
  • 1 medium sweet potato
  • 1 cup Chickpeas precooked or canned
  • 1 cup canned tomatoes or ripe fresh tomatoes chopped
  • 2 cloves garlic
  • 2 handful spinach
  • 2 tbs olive oil
  • 2 tbs wallnuts optional
  • 1 tbs cumin powder
  • 1 tbs honey agave or maple syrop
  • sea salt by taste
  • black pepper by taste
  • pinch of Harissa or chilli pepper

Instructions

  • Peel and wash the potato, then chop into 1 cm cubes. Peel and finely chop the onion and the garlic.
  • Heat olive oil in a deep frying pan on medium heat and cook the onion and the garlic.
  • Add the sweet potato and let it cook for a little bit.
  • Add the tomatoes, chickpeas, a little water and stir.
  • Season with salt, cumin, chilli pepper and let it simmer for about 25 minutes or until the potatoes are cooked.
  • Try the stew to see if it needs some more seasoning, because usually potatoes absorb the salt... season again if needed. Wash and add the spinach, stir and let it cook for 1 minute.
  • Season with freshly ground black pepper and serve with some ground walnuts on top.

Notes

*The stew could be made with no spinach without losing its delicious and nutritional qualities.
