- 1 small onion
- 1 medium sweet potato
- 1 cup Chickpeas precooked or canned
- 1 cup canned tomatoes or ripe fresh tomatoes chopped
- 2 cloves garlic
- 2 handful spinach
- 2 tbs olive oil
- 2 tbs wallnuts optional
- 1 tbs cumin powder
- 1 tbs honey agave or maple syrop
- sea salt by taste
- black pepper by taste
- pinch of Harissa or chilli pepper
A wonderful Spanish stew with sweet potato, chickpea and spinach. All of the main ingredients are super healthy, which means we have everything our body needs – vegetable protein, zinc, iron, folic acid and various vitamins.
The idea behind this stew is a traditional Spanish dish that really impressed me with unique flavour and taste, and which I wanted to recreate at home.
