  • 50 g almonds salted roasted almonds can be used

Fennel is an old, originally Mediterranean cultivated plant that occasionally grows wild in Central and South Europe . On the one hand, the bulbs are processed and enjoyed, but the seeds are also often used as a spice. Fennel is traditionally part of dishes with fish, but it is also often added to sauces and minced meat. Finely chopped fennel leaves are used in small quantities to season soups and salads too.

Fennel is also used in some spirits. I worked in the restaurant business many years ago (when I was very young :)) and found the smell very unpleasant back then. It took me a long time to give fennel a chance in my kitchen. I still don’t like this vegetable when it is not cooked but maybe it will just take some time to start liking the raw taste too.

I can’t remember why but my husband bought fennel and wanted to make a salad with it … He knows that I don’t really like fennel taste and started looking for ideas on how to make fennel and its smell more mild. He saw in many recipes online that it was prepared often roasted and we just tried it. Then it happened – I really liked the taste and started experimenting with roasted fennel.

This quinoa salad with roasted fennel, carrots and citrus fruits can be served as a main course. The portions given are for four people, but as we have this as a main course I set it up as two Portions. Even if there is some left over, the salad can be eaten the next day.

Instructions
  1. Preheat the oven to 200 degrees. Peel the fennel and carrots. Cut the fennel into slices. You cut the carrots in long stripes but not too thin.
  2. Season the vegetables with 2 tablespoons of olive oil and salt. Place the fennel and carrots on a baking sheet with baking paper. Bake the vegetables for about 30 minutes or until they turn golden brown
  3. in the mean time cook the quinoa as described on the package. First wash the quinoa with warm water to remove the bitter substances. Then let it cook for about 15 minutes.
  4. Mix the ingredients for the dressing well and let rest. Peel the tangerines /oranges that you add to the salad by also removing the skin.
  5. When the quinoa is cooked, let it cool down under cold running water. I use a large strainer to drain the quinoa, which is super convenient.
  6. When the vegetables are ready, wait 10 minutes for them to cool down a bit. Mix the quinoa, almonds and peeled tangerines/oranges in a large bowl. Add the roasted vegetables, dressing, and chopped fresh parsley.
